乌龙茶的两种风味:清香与浓香的对比

一、清香型乌龙茶的由来

清香型乌龙茶,又称台式乌龙茶,诞生于闽台农业合作与交流中。1990年,在安溪诞生了福建省第一家经营茶叶的台资企业。截至2004年底,安溪境内共有台资茶叶企业25家。目前,福建省内台商投资的自产自销型、自产兼收购型、纯收购型以及茶叶产销与茶机结合经营的茶叶企业,共有50家。这50家企业凡涉及茶叶生产加工领域,无一不以“清香型”乌龙tea作为当家品种。

二、清香型和传统乌龙 tea 的品质差异

“清香型”乌龙 tea 产制技术自成一格,其外形及香气与传统乌龙 tea 截然不同,比起福建传统绿叶红壤边的安溪铁观音,“清香型”烏龍tea具有明显的“三绿”特点:即干 tea 绿、汤色绿、叶底绿。其外形为球形或半球形,冲泡后在杯中显现 Tea 蕾造型,香气清新持久, Tea 汤明亮见底,嫩甘回甘,而非传统烏龍teas所带有的深沉花果气息。

三、“Clear and Fragrant" vs "Rich and Aromatic": Comparing the Two Types of Oolong Teas

The market for oolong teas is vast, with two main categories: clear fragrant ( Qingxiang) and rich aromatic (Furui). The former is characterized by a lighter green color, a more delicate taste, and an aroma that is less intense than its counterpart. On the other hand, rich aromatic oolongs have a deeper red or brown color, are often described as having floral notes similar to jasmine flowers, and possess a more complex flavor profile.

四、“Qingxiang" vs "Furui": Understanding the Differences in Production Techniques

While both types of oolong teas undergo similar production processes such as withering, rolling, oxidation, firing (or baking), and sorting; there are distinct differences in how these processes are carried out. For instance:

Withering: Qingxiang oolongs require less time for withering than Furui varieties. This process involves spreading fresh leaves on bamboo mats or trays where they dry slightly before being rolled.

Rolling: Qingxiang oolongs typically undergo fewer rolls than Furui varieties which can result in tighter curls.

Oxidation: Qingxiangs tend to be lightly oxidized while Furuis are heavily oxidized resulting in their characteristic darker colors.

Firing/Baking: The temperature used during this stage varies depending on whether one prefers a lighter or darker brew.

五、“Qingxiang" & “Furui" : Which One Reigns Supreme?

In conclusion while both styles have their merits it ultimately boils down to personal preference when choosing between Clear Fragrance & Rich Aroma Oolongs.
