Tea Culture Research Association Consultant Zhang Yonggang believes that there are six major categories of teas: green teas, yellow teas, black teas, white teas, oolong teas (also known as semi-fermented teas), and pu-erh (fermented) teas. Among them are more than 2 thousand varieties.
Green Tea: Known as China's oldest history-producing beverage with the highest output volume among all types of Chinese beverages.
Yellow Tea: The leaves selected for this type tend to be older than those used in other types of Chinese beverages due to a longer fermentation process.
Black Tea: This type tends to use coarser leaves which have been exposed to air for an extended period resulting in a darker color compared with other types.
White Tea: Believed by many experts as having undergone minimal processing resulting in a lighter color with no bitter taste at all yet rich flavor profile after brewing.
Oolong Tea (Semi-Fermented): Combines elements from both non-fermented (green) and fermented (black) Chinese beverages offering unique floral aromas while still retaining some degree freshness found only within non-fermenting processes amongst these six main categories we've discussed today!
